we have different honey flavours. Just as different flowers
have different scents or perfumes, so their nectars have different
flavours. Honeybees collect nectar from flowers which they turn
into honey. Enough nectar from one source and we have a distinctive
honey flavour. The comment we get when people taste our honeys
is that they "cannot believe the flavours can be so different".
So "how do we train our bees?" you might ask. This is simpler
than it sounds! The first method is to use geographic location.
I.e. pick an area where there is only one type of nectar yielding
plant flowering.
Secondly, honey flows can be separated by the time of flowering
of the target plant. This is done by removing all the honey
from the hives just before the target plant starts flowering,
and then harvesting it immediately after it finishes.
Thirdly, we use our laboratory to positively match each honey
type to its distinctive attributes. We do this with over 15
years of laboratory experience using internationally
acclaimed and accepted methods.
